Ingredients
220 g basmati rice
400 g plum tomatoes
1 tbsp tomato puree
2 tbsp oil
1 onion, finely chopped
1 chilli, finely chopped
1 clove of garlic, finely chopped
salt and pepper
500 ml chicken stock
50 g carrot, diced
50 g frozen peas
Instructions
Heat the oil and add the onion for a few minutes before adding the chilli and garlic. Continue cooking until the onion has turned translucent before adding the rice, tomatoes and puree. Cook for about 5 minutes , breaking up the tomatoes with a wooden spoon, and seasons with salt and pepper.
Add the stock and continue to simmer. After another 5 minutes, add the carrot and peas and cook for about 10 minutes or until the liquid has been absorbed and the rice is cooked. Taste, checking for seasoning.
Remove from the heat, cover well with butter papers or greaseproof paper and a lid and let the rice stand in a low oven (120°C) for at least 10 minutes or for up to 2 hours.
